Pot Pie Muffins

I pinned this recipe a while ago, and boy am I glad I did.
It was so EASY, comforting, and delish that I can't wait to make it again!

Preheat oven to 400.
Combine all ingredients except for your choice of dough.
Lightly grease muffin tin, and either divide Puff Pastry dough into each tin or follow directions on phyllo package for a nice, light, flaky alternative. A little more work, but totally worth it.
Spoon pie mixture into each cup.
Bake for about 15 minutes, just be sure to keep an eye out around 12 minutes.

Here is another version for anyone that eats "clean", and if you have extra filling, put it over toast or in a pita for more great alternatives.

My final thought for today, is that anyone near East Colorado needs to join the Denver Bloggers Facebook Page that Sami started. We all need to meet up, and I think this will be the best way to get everyone together! Shoot, you don't even have to live in Colorado. We will take visitors too ;)

I will have to make these pot pie thingamajigs. But I will be the only one eating them. My kid doesn't like pot pies. Maybe if you came and made them he surely would for a hot chic!
